This is a general list of the applications I’ve found best on OS X. I might get round to doing the equivelent list for Windows Applications sometime.
Someone much more experienced with Macs has a similar list, I’ll be going through it soon.
Accessories
Little progams that help with the system in general, not for a specific work or play task.
Internet
Tools for browser, downloading and communication over the internet.
Office
Creating documents, PDFs etc.

Editing Apps
Interestingly, if you hold down the option key and click on an application, OSX will let you get into the resources that make up the program.
